High Altitude Palisade Peach muffins ( no refined sugar, no dairy, can use flax egg)

Preheat oven to 400 degrees 
Dry ingredients, mixed together in a separate bowl
3 cups all purpose flour
1 c whole wheat flour or white whole wheat flour
4 tsp baking powder
1.5 tsp salt
1/2 tsp cinnamon 

Wet ingredients
1/2 cup (1 stick) butter melted and then creamed in mixer 
Add 1 peach squeezed for juice by hand (include the mashed flesh too)
flax "egg" (1 Tablespoon flaxseed meal + 3 Tbsp water that you allowed to sit for 5 minutes to gel)  optional or you can use regular egg
1/4 cup honey or maple syrup (I liked honey best) 
1 tsp vanilla extract
1/4 tsp almond extract (optional) 
Add dry ingredients and lastly add the 1-2 peaches diced

Bake in oven until toothpick inserted comes out clean, approximately 20-30 minutes depending on your oven.
